Son of bare trees was adapted from Randy Mosher's Abbey Singel recipe. It was meant to be a low ABV, low IBU, malty beer fermented with a Belgian Yeast - I followed Randy's hop schedule but used Citra for bittering instead of Challenger. I did around a 4 gallon batch, ran off 4 litres into a PET bottle and stuck in the Wyeast California Lager yeast, hence Son Of Bare Trees. Bare trees will be saved for another day but suffice to say there was a nasty off flavour in there which I thought was down to the fermenter, but it was just starting to creep in when I had this last bottle of Son of Bare Trees. I quite liked it but it never tasted quite how I expected it to but I really liked the crispness the yeast gave it. It was definitely better fresh though and never really had the malt character I wanted it to have.
